Happy Thursday! Have you all been having a good week so far? We have almost made it to Friday!
We are SUPER excited because tomorrow we are leaving on a vacation to Grand Cayman. Our time will be spent on the beach, eating tons of seafood, and spending quality time with our family. We have a pretty bad habit of not taking time to relax, so this trip will be just what we need because we will be forced to relax, which is never a bad thing!
We will try to share pictures of our outfits, stuff we are doing there, and food (duh!) because we are really trying hard to be more transparent and share more of what happens in our lives other than the pretty pictures we post on Instagram.
Anyways, onto what you all are here for (admit it!) Food always takes priority, especially when it is this amazing!
I had been on Pinterest one night (such a terrible idea when you’re hungry for a change) and kept seeing tons of incredible-looking dishes with M&M’s in them. I couldn’t even think of the last time I had some M&M’s! It had been long overdue, but it was not because I didn’t want to eat them. As you all can tell from the recipes we share and what we eat, we don’t eat a ton of dairy. We have tried eating cheese and other dairy products, but it is just not a good experience when we eat it. We can eat yogurt (probably because of the probiotics in it), but cheese and ice cream does not go over so well. This time, though, I wanted M&M’s and I was going to have them. I didn’t even care if I was going to feel like crap later!
I found these dark chocolate M&M’s at Kroger and already knew I wanted to make something with peanut butter in it. Oh, and chocolate, of course! That is a given, though!
Let me just tell you that this is probably my most favorite thing I have made yet. That is saying a lot, just so you know;) If you all could only have heard the sounds we were making and our facial expressions as we were eating this skillet cake. This will definitely be making another appearance in our kitchen very soon! PS- excuse the abundance of pictures in this post. I took way too many!
This gooey M&M peanut butter and chocolate skillet cake is a super quick and easy recipe made in one bowl. It can even be eaten right from the skillet!
Top it with some cold vanilla ice cream or even some peanut butter ice cream!
If you don’t like peanut butter (we don’t know how you could not like it, but to each their own!), you can substitute with chocolate or vanilla protein powder. You could also replace the protein powder with another flour, although I don’t know how much it will change the texture!
The top of the cake gets firm, but the middle stays gooey and so rich tasting- just the way it should be! The M&M’s get warm and melty- just so perfect.
The batter will be pretty thick when you’re scooping it into the cast iron skillet, but that is exactly what you want.
Once the edges are browned and the center is cooked through, but not completely, the skillet is done cooking in the oven (if you want the cake to be gooey in the middle!)
We used a combination of peanut protein powder, our Simply Stacked all-purpose mix, and NuStevia cocoa syrup, which is a cocoa syrup made from stevia. If you do not have this syrup on-hand, you can omit it and add a little bit more liquid. You could also substitute it for a couple of tablespoons of peanut butter.
To serve, you can eat it right out of the skillet with several spoons, or one, either way;)
